Quick & Easy healthy oat cookies

I just love oat cookies. It’s a nutritious treat that hits the spot and doesn’t add loads of calories. They are simple to make and a great way to get the kids involved in the kitchen. I often include whatever I have in the cupboard, but admittedly, I always make sure I have these ingredients on hand. You never know when you need a quick fix to sooth a craving. They make a great lunch box snack.

  • 3 cups of quick cook oats
  • 1 cup mixed seeds (I included Chia seeds)
  • 1 cup slivered almonds
  • 2 eggs
  • 1/2 cup melted butter
  • 1/2 cup of brown sugar
  • 1 cup of chocolate chips
  • fat free/low fat milk or water

Start by blending 2 cups of oats till fine (ta-da : oat flour). This goes fairly quickly and is not messy at all. Add it to your mixing bowl and add the remaining 1 cup of oats. Toss in your seeds, almonds & chocolate chips and give it a good mix .

Melt the butter and beat the eggs, mix them together and then add the sugar. Mix till smooth and add to your dry ingredients. Mix all the ingredients well to insure you have no dry pockets. Add a bit of milk or water if mixture appears too dry. Not too much, as the mixture must not be runny.

Using a table spoon, spoon the mixture onto a baking tray. And bake @ 180degrees for roughly 15 minutes or till the bottom is looking golden brown. The cookies will harden as they cool.
